Tasting Notes: Chocolate, Toasted Nut, Sweet
Origin: Chiapas, Mexico
In addition to being the home of some spectacular Mayan ruins, the high forests of Chiapas, the southern Mexican state bordering Guatemala, are ideal for growing coffee. This coffee from various small holders in Chiapas offers a very clean sip with notes of chocolate, toasted nut, and pleasing sweetness. We'll be over here pairing ours with some housemade chocolate peanut butter cups. Not going to lie: We bought this coffee to use in blends, but every time we cupped it, it struck us as a really solid cup all on its own. It's been a long time since we've tasted a Chiapas as clean, sweet, and just darn tasty as this one. We think you will agree!
Note: We roast on Mondays and ship or have beans ready for pickup the following day. Order before midnight on Sunday to have your beans included in the next day's roast.
