Tasting Notes: Red Fruit, Citrus, Jasmine
Origin: Caicedo, Antioquia, Colombia
After saving up for years as a coffee picker on other farms, Elkin Diosa was able to purchase his own farm in this popular coffee region of Colombia. Using a special honey processing technique, his beans have since been turning heads all around the world.
In the honey process, some (but not all) of the coffee cherry fruit around the beans is removed before drying, resulting in uniquely complex coffees with nice sweetness. Last year's La Yalena was delicious, but this year's is even better. In this beautiful cup, we taste red fruit, refreshing lime, and floral jasmine.
Note: We roast on Mondays and ship the following day. Order before midnight on Sunday to have your beans included in the next day's roast.
