After receiving the coffee cherries from partner farms, Marta's sons, Elias and Shady, take care of all the coffee processing using expertise that they have built over years of trial and experimentation.
They also process beans from the family's own estate, El Vergel, where they have planted an impressive array of nearly 30(!) coffee varietals, including Geisha, Java, Pacamara, Red Bourbon, and Laurina.
